The Stress Free Way To Travel During The Holidays

Many of us live several states away from Mom and Dad and there
are some of us that require flight time as part of our holiday
ritual. For those of us that have to travel to other countries
during the holiday season, flying could be tougher than at other
times of the year. Here are a few tips for world travel during
the holidays.

First of all, keep your smiling face on during your airport
experience. In the airport, the employees have all of the
answers and they have all of the power. When you are already
running late or sense the upcoming delay in your flight, it is
easy to lose patience with these scrooges, but keeping your
temper in check could be very beneficial. After all,
everything that goes wrong in your life is not their fault, it
just seems that way at the moment. Keep in mind that being
super nice during a not-so-great situation could mean “free
upgrade” and being not so nice could result in lost luggage, or
even worse, a full body search as you are “randomly” picked out
of the line.

If you have the opportunity, fly during off peak hours. It may
be a little inconvenient to have to leave out in the middle of
the night, but it could mean beating a huge crowd of people in
the airport. Plus if you leave your home airport in the middle
of the night, after the time differences (or the international
date line) you may be arriving at your destination at a great
time of day. Better yet, it could be discounted tickets for
those “Red-Eye” flights.

Have something to do while you wait. Inevitably, on an
international flight, you are going to have some delays here
and there. It could be a four hour layover in Denver or a 30
minute wait at the gate for the boarding to begin, but waits
are highly likely. If you have something to read or something
interesting to keep your mind busy and occupied, those wait
times will seemingly be cut in half. Plus, keeping your mind
busy helps you to keep you patience, which takes us back to the
number one tip of being nice to airport employees.

Keep security in mind. Post 9/11 security has been greatly
increased on all flights, both foreign and domestic. In order
to keep things moving smoothly, it is best for you to check as
much of your baggage as possible and don’t pack things that you
know will trigger an alarm of any kind. Wear shoes that are
both comfortable and easily removed and replaced. Have all
liquids pre-bagged and remove your coats or jackets before
prompted. These little things will help speed the security
process and keep your patience in check.

Traveling with children could make everything difficult.
Keeping them happy is not always the easiest task on your list
of things to do on your world travel. Think about how bored
and agitated you get while having to wait in lines and in
terminals, then how bored you get on the plane, then multiply
that by at least 20 =D0 that is how your kids feel. Keep them
occupied with small, quiet toys, coloring books, handheld video
games or DVD players, etc. What ever will keep their attention
and save your sanity.

Last but definitely not least is to ship your presents. I know
it may seem like you could save money by just packing an extra
suitcase and putting it on the plane with you, but in the long
run, it really will be easier to just ship the gifts to
grandma. Ship them several weeks in advance so that you know
they get there before you ever leave the states. It is much
less likely for the gifts to be lost by the postal services
than for them to be lost in the “realm of lost luggage” that we
all have heard of.

I hope these tips for world travel during the holidays have
helped you to keep in check that temper that you know all too
well. Keep in mind that everyone in the airport has a family
and friends that they would like to spend the holiday with as
well. Keep your attitude merry and bright, and remember, Santa
Claus is watching you!

CHICKEN ENCHILADAS

Before you start to build the enchiladas… whip out that Girl
Scout motto and “be prepared”! You can fix this stuff a couple
of days in advance and then “whip it together” for your guests
or for a quick supper after a day of Christmas shopping.

Okie dokie… prepare the Chile Sauce recipe below and
refrigerate so it READY. Also, cook the chicken and “chop it”!

“Oil-righty then”… here we go…

CHILE SAUCE

1/2 cup onion, chopped

1 garlic clove, finely crushed

2 tablespoons olive oil

1 tablespoon whole wheat pastry flour

1/8 cup chili powder (if you like it hotter, add more!)

1/2 teaspoon dried oregano

1/4 teaspoon dried cumin

1 teaspoon salt

2 cups pureed tomatoes (lowest carb count you can find)

1 chicken bouillon cube

Cook the onion and garlic in the olive oil until onions are
clear. Sprinkle flour and stirring quickly, cook for one
minute. Add remaining ingredients mixing well and stirring
often. Simmer for about 10 minutes. Makes two cups.

Now for the Enchiladas… FIRST… prepare the Filling (recipe
below):

FILLING:

1/2 cup onion, chopped

2 tablespoons butter

2 cups cooked chicken, chopped or shredded… your preference

Have you been hearing about detoxification more often? That’s
because we are now recognizing and appreciating that our bodies
are not just separate parts, but a connected system which must
be in “balance” if we are to feel and be well.

1 cup Chili Sauce

1 cup sour cream

Salt to taste

Saut=E9 onion in butter and add other ingredients. Set aside
while preparing tortillas for BUILDING enchiladas!

Now let’s build enchiladas…

Olive oil

12 low carb tortillas

2 cups cream

1 cup chicken stock

1 1/2 cups Jack cheese grated

Heat oil in heavy skillet and cook tortillas just a few
seconds. Combine the cream and chicken stock until well
blended.

After cooking each tortilla, dip each one in the chicken stock
and cream mixture. Spread filling mixture on the tortillas
(kinda like peanut butter on a sandwich), roll the tortilla,
placing the seam side down on a baking dish. By the way, this
dish should be big enough to hold 12 of these puppies! After
all tortillas are filled and rolled, pour the remaining liquid
over them. Sprinkle with cheese and bake in a 350=B0 oven until
hot and cheese is melted… about 25 minutes.

Serves 12

Carb count for Total Recipe:

107 grams carbs/19 grams fiber # 88 net grams of carbs

ADD the carb count for your tortillas! WOW… this is ONLY 7.3
grams of carbs per serving and if you ADD 3 net grams for the
tortilla it is still only 10.3 grams for a very special treat.
Who says low carb cooking is boring??

your teen’s academic progress can be
difficult. Most teens don’t volunteer much information and
they don’t like answering a bunch of questions. So, what’s a
well-meaning parent to do?

Communicating with your teen’s teachers on a regular basis can
be a big help in your quest to know what’s going on with your
teen’s school work. Not only will the communication help you
to keep abreast of grades and progress, it will benefit the
teacher as well.

Think of yourself as being a partner with the teacher, you help
each other in providing what is best for your teen. You each
have different contributions to make and they are equally
important. You need information from the teacher so that you
can be an extension of the classroom. The teacher needs
information from you about any problems or concerns so that she
is better equipped to help your child at school. The bottom
line is, the more information each of you has from the other,
the better chance your teen has of being academically
successful. I have seen drastic improvements in a student’s
performance once the student realized that their parents and I
were communicating frequently, and honestly, about his
performance and how to provide what was best for him.

The most important thing to remember in any communication with
a teacher is that you both want the same thing, and that’s for
your teen to be successful. But you need to remember, teachers
are very busy. You’ll get better communication and responses
from them if you make it as quick and easy for them as
possible. Don’t feel like you’re bothering them, it’s part of
their job to give you feedback. But the easier you can make it
for them, the better job they will be able to do in
communicating with you.

It is a good idea to simply ask each teacher what their
preferred method of communication is. One of mine was by
email. Phone calls are fine, but teachers aren’t available by
phone during much of the school day. Email can by checked
quickly and answered easier than returning a phone call. Of
course, sometimes you do need that human contact, depending on
what the communication is about.

Just like teachers, you also have a very busy life! So make
the most of any communication by being prepared. Be
proactive. Have it clear in your mind what you want to ask or
convey. Be concise and direct, have any questions or concerns
written down.

Finally, my experience has shown me that the way in which you
present yourself during communication with a teacher can have
just as much impact as the actual information exchange itself.
Be calm, level-headed, and informed. Even if you disagree with
or have a problem with the teacher, be polite. You will easily
lose all credibility if your approach is filled with blame and
anger. Remember, you and the teacher want the same thing!!

stairs for 10 minutes instead of having a snack and sitting in
your office (Burns approx. 100 calories)

Get up 10 minutes earlier then you normally do and go for a
walk instead of sleeping in (Burns approx. 100 calories)

Do yoga for 10 minutes after you get home instead of watching
television (Burns approx. 50 calories)

Weight loss is all about combining a healthy nutritional diet
and daily exercise so you can only see a change if you make a
change. Eat healthier foods, go up the stairs instead of the
elevator, it all adds up in the end.

If you are serious about losing weight then you should be
willing to change your diet for the better, because it’s not
just about losing weight but having a healthy lifestyle. Which
is a combination of eating right and excercising. It doesn’t
matter if you go to the gym or not but don’t be lazy. Go for a
walk after supper to burn some of the calories that your body
would normally digest and keep attached or park far away in the
mall parking lot just to walk farther. Walk around the mall a
few times before buying something or leaving. All these little
things help out in the end.

For a lot of people it means going to the gym for a half hour
before or after work. Doing a lot of cardio can help you lose
weight fairly fast. Bring a mp3 player with you to keep you
focused, or even read a book. It isn’t that hard for you to
take a hour out of your day to keep in shape and healthy, so
just do it!

win-win situation.

7. Choose your snacks wisely – It’s okay to eat snacks in

eating chocolate or candy, and it’s too difficult for you to
give up sweets – don’t fret. You can still enjoy your snacks,
no one is saying you have to eat things you don’t like. Pick up
your favorite fruit and make a smoothie!

8. Have faith in yourself- That great saying “whether you say
you can or you say you can’t, you’re right”. Well, that’s true
with any endeavor – weight loss included. If you don’t believe
